Cauliflower is a cruciferous vegetable. While white is the most common color, you’ll also find cauliflower in shades of orange, purple, and green. It is an offshoot of a type of wild cabbage that’s also the ancestor of kale and brussels sprouts. Nutrionally it contains carbohydrates, fibre, protein, sugar and sodium. It also has vitamin C, K, Iron, flolate, potassium and magnesium.
Cauliflower has a group of substances known as glucosinolates. They have anticancer, anti-inflammatory, antiviral, and antibacterial effects.
