These peanut butter banana muffins are not just healthy, but also delicious. What a great combination? They are gluten-free and are great for breakfast or just a snack. Both adults and children enjoy these.
They are lightly sweetened and packed with flavor, leaving you wanting more of their buttery delight.
Ingredients:
- 2 mashed ripe bananas
- 2 flax eggs- 2tbsp flaxseed meal + 4tbsp warm water, mixed and set aside
- 1/4 cup creamy/ smooth peanut butter
- 1 cup coconut milk
- 1/2 tsp baking soda
- 3tbsp coconut oil
- 2 cups quick oats- if you have old fashion oats, you can always blend them.
- 1/2 cup old fashion oats
- 1 tsp vanilla
- 1/2 tsp cinnamon powder
- A pinch of salt to taste
- ¼ cup cane sugar/ 3tbsp honey (optional) for added sweetness
Instructions:
- Preheat the oven to 200 degree Celsius. In a small bowl, mix 2 tbsp. of flax meal with 4 tbsp. of warm water and set aside.
- In a mixing bowl, use a fork to mash your bananas, add the peanut butter, and mix it in.
- Add coconut milk, honey, baking soda, vanilla, oil, cinnamon powder, and vanilla. Then, add the flax eggs and mix.
- Mix in the quick oats and the old fashion oats until a thick batter forms.
- Allow the batter to rest for 5 mins.
- Pour the batter into about 8 muffin cups and bake for 25-30 minutes until the tops are lightly golden.
Drizzle more peanut butter on top if you desire, another option is to add chocolate chips or raisins to your batter.
